Simple Quarantine Recipes

Being home means that I get to make a homemade meal for breakfast, lunch and dinner. And guess what? I still hate cooking. Okay, I don't "hate" it, but it's not my favorite thing to do. I just don't want to do it most of the time, that's why I've compiled a list of of quick and easy recipes that I have been loving during quarantine.

Oat Balls

1 1/4 cup rolled oats
1/2 cup peanut or almond butter
1/3 cup honey
1 teaspoon vanilla extract
1/2 cup chocolate chips
1/4 teaspoon kosher salt
a pinch of cinnamon

Mix ingredients and refrigerate for thirty minutes

Banana Bread

3 ripe bananas
1/3 cup melted butter
1 teaspoon baking soda
3/4 cup of sugar
1 large egg
1 teaspoon of vanilla extract
1 1/2 cup of flour
1 cup chocolate chips
pinch of salt

Preheat over to 350 degrees
Mash the bananas until completely smooth
Stir in the melted butter to the mashed bananas
Mix in the baking soda, salt, sugar, beaten egg, vanilla extra and flour.
Mix in the chocolate chips (and walnuts if you like those, I don't, gross)
Bake for 1 hour

Cucumbers + Cajun Spice

Cajun Spice (or other type of spice)

Cut cucumbers
Sprinkle with spices

Yogurt Parfait

Fruit (strawberries, blackberries, blueberries, etc.)

Put as much yogurt as you want in the bowl
Top with the amount of fruit of your choice 
Top with the amount of granola as you'd like
Drizzle honey on top
Add a sprinkle of cinnamon
