If you follow me on Instagram @michelekatsaris, then you would have seen that I went to Colorado recently. To say the least, this was the most poorly planned trip I have ever had—still fun nonetheless—but poorly planned which means this blog post is going to be a little chaotic.

The first day, and I do mean about an hour after we got off the plane we decided to go horseback riding. I am always down for adventures with animals and I love horseback riding!! This was a great way to start the trip because it was so fun and such beautiful scenes. After that we walked around a shopping area and got some food. Pretty chill first day if I do say so myself.

Day two was reserved for snowboarding/skiing. So, I totally suck šŸ˜‚, but it was still a lot of fun. Plus I thrifted my ski outfit–isn't it cute!? Even though I think I was .2 seconds away from getting frostbite on my fingers, it was still a lot of fun to do a winter sport in a place that it was meant for.

Which leads us to Saturday, the most epic fail of all fail days. Now I do say this with a light heart and everyone who was on the trip knows why. Long story short, we thought we were going to these cool natural hot springs (3.5 hours outside of Denver I might add), but when we pulled up they were just these tiny little pools on the side of the highway. Oh and they were completely crowded. So to be troopers we went on a couple different adventures in the area that honestly were just not worth it. Absolutely stay away from Glenwood Adventure Park—a waste of time and money. And if you're going to do the ice castles don't go in the middle of a snow storm at night. Yeah the color changing lights are cool, but I would have preferred to go during the day when it was a little bit warmer and way brighter for good quality photos. All in all this day gets a 5/10 because we were all troopers.

On Sunday all of our friends were leaving so half of us went on a hike while the other hiked around Golden, CO (and by hike, yes I do mean brunch and shopping). After we all met back up we went to this cool arcade bar called 1UP and had these cool waffle dessert things and played old school video games. After we dropped our friends off at the airport my boyfriend and I headed to our next destination which was Salida, CO.

This was the day I was waiting for. The cremĆ© de la creme of this trip was the dog sledding. I researched several different dog sled places, did my due diligence and found Monarch Dog Sled Rides. Seriously it was everything I could have wanted and more. It also wasn't nearly as expensive as you would think! Less than $300 for our sled that fit 2 people, so less than $150 each. For two hours of dog sledding, learning about the history of dog sledding and of course playing with the pups. I can't recommend Monarch Dog Sled Rides enough and when the pups hit retirement age they are available for adoption so be sure to check out monarchdogsledrides.com for more info! The rest of the day we walked around the town of Salida and it had a total old town vibe to it, but it was so fun and totally worth a visit if you're ever in the area. We ended our nights at the Cottonwood Hot Springs. Honestly it was just so peaceful and way better than our "natural" ones we can across on Saturday šŸ˜‚. If you do go to a hot springs just pay for it it's 100% worth it!

The next day we headed towards Aspen. Our plan was to stay in Aspen, but have you seen those hotel prices?? No thanks! So we stayed about 30 minutes outside of Aspen and started our night with a boujee dinner at Acquolina. Now, I can only paint this picture for you but when I say that they had over 1,300+ bottles of liquor all around the bar and not one bottle repeating. They were lined up on shelves from the entrance point all the way to the seating area and even more behind the bar. The bartender told us that there were some bottles that once they were gone they were gone forever–so those shots were $900+. It was insane and cool all at the same time. We definitely had our fancy date night that night, but don't worry we didn't spend $900 on a shot of alcohol.

The next day we actually explored Aspen all day long. We went shopping had pastries and coffee at Paradise Bakery & Co. Aspen goes from super high end to very trendy in the matter of seconds and I loved the vibe there. It was it's own little town and I totally get why everyone wants to visit and all the celebrities stay there. It was really nice! But alas–our fanciness had to come to an end šŸ˜‚ and we headed back to Denver for our last couple nights.

Okay, so let's talk about Boulder, CO. We decided to drive to Boulder for the day which I was excited about because if you are a "Make It or Break It Fan" then you have heard all about Boulder haha. I really wanted to explore this big city and as we got into town we realized it was a college town too. We ate at this super famous bar/restaurant called The Sink, and yes I mean famous because even celebrities and presidents have eaten here. The food was good, the drinks were good but something...was just off about this restaurant and this town. Honestly, you should visit for yourself and take my opinion at face value. My boyfriend and I were definitely not clicking with this town so we headed back to Denver to get ready to head back home. We still had a good time, but that may just be our first and last time visiting Boulder.


All in all, even though this was not the most planned trip, it was still a trip nonetheless. I experienced new things and a new state and can cross Colorado off of my list of states to visit! Plus everyone said CO is way better in the summer, so maybe next trip will be completely different!
